I purchased this knife under the impression it was a general-purpose Santoku knife, but it has proven far too fragile for such use. While the blade is undoubtedly sharp, it is exceedingly thin and prone to chipping, bending, or distorting with even the slightest amount of force.
This knife is best suited for delicate slicing tasks, such as cutting soft fruits or vegetables, where precision is paramount and no significant resistance is encountered. However, it fails when faced with semi-hard materials, such as the crust of a glazed ham. Using it in such scenarios risks permanent damage to the blade.
