A Benchmark for Modern Sakai Grinding

The Tetsujin Ginsan K-tip was one of the knives that helped me understand why Myojin-san has become so highly regarded among knife enthusiasts.

The first thing that stands out is the precision of the grind. The knife moves through ingredients effortlessly while maintaining excellent feedback and control. The geometry is highly refined and immediately gives the impression of a knife built for performance.

The K-tip profile and long flat section make this an outstanding knife for push cutting, chopping and high-volume prep. The edge contact with the board is excellent and the knife feels incredibly efficient when working through onions, herbs and vegetables. It encourages a confident and deliberate cutting style.

The Ginsan steel is easy to maintain and takes a very keen edge. Combined with Myojin-san’s grinding, the knife delivers exceptional cutting performance while remaining practical for everyday use.

What I appreciate most about this knife is its clarity of purpose. It does not try to be everything at once. It is precise, efficient and highly capable. Compared with some more forgiving or rounded profiles, the Tetsujin feels more focused and performance-driven. It rewards good technique and makes you want to improve your cutting.

After owning and using many Sakai knives, I still consider the Tetsujin Ginsan K-tip to be one of the best examples of modern Sakai craftsmanship and one of the reference points for understanding Myojin-san’s work.
