Important Information

  • We offer complimentary first-time sharpening in our Tokyo shop for any knife purchased from us.
  • Knives from other brands/stores are fully welcome for sharpening.
  • Because we thin the blade during sharpening to achieve a keen edge, brand logos, engraved inscriptions, and Damascus patterns should generally be expected to disappear. If you would like to keep them, please let our staff know when you drop off your knife.
  • Other Tools: We can also sharpen Japanese wood planes (Kanna) and pruning shears. Please feel free to consult with us.

Our Sharpening Process

1. Inspection & Diagnosis

We inspect the overall condition of the knife, checking for chips, bends, warpage, and blade wear.

2. Chip Removal (Rough Grinding)

Using a rotary grinding wheel, we eliminate blade chips and severe edge damage.

3. Warpage Correction

We carefully tap and bend the blade to correct any distortion and ensure straight alignment.

4. Blade Thinning (Nikunuki)

Using the rotary stone again, we reduce the blade's thickness to restore optimal cutting performance and geometry.

5. Surface Polishing

Using fine polishing paper, we smooth out grind marks and polish the blade surface to a beautiful finish.

6. Micro-Beveling (Koba-tate)

Using a flat rotary wheel, we create a micro-bevel on the edge to strike the perfect balance between durability and sharpness.

7. Hand Finishing with Whetstones

Finally, our craftsman sharpens the knife by hand using traditional bench whetstones (Kaku-toishi) for ultimate edge refinement.
