I bought this knife as a stop gap between “nicer pieces” but have been blown away by the agility and precision that this knife delivers. Excellent edge retention and ease of care/sharpening are other descriptors I would use relating to this knife. I’m a big fan of the PS60 that this company produces and that’s what led me to this knife in particular because they do such a good job with their other line. Truth be told, i love this knife and won’t be putting it down anytime soon.
