Genkai Knives sharpened by Mr. Hakui
There are only a few people who able to do sharpening job for Genaki, and Mr. Hakui was one of these sharpeners.
The specialty of Hakui's sharpening is, consistency of backside (Urasuki) and bevel (Kireha), we believe this functionality made Genkai popular especially for high-end Sushi chef in Japan, who don't buy knife just because looks but his sharpening were so nice from the view of the user. His polishing on the frontside (Hira) wasn't fancy as much as other sharpeners, but that slanting scratch line became his signature.
Sadly, he passed away earlier of this year and we can not create any Honyaki with him anymore. This is one of the old stock our partners kept at his storage for a long time.
There was only one student who learned Mr. Hakui's technic, he is now making our single bevel lines under the name of "Manzo". After Haku's passed away, Manzo got all these machines that Mr. Hakui used, it was his wish.
Manzo's sharpening technic was identical of Hakui's sharpening, consistent Ura and Flat Kireha, you can find his current work on our Kikuchiyo Manzo Silver #3 Yanagiba. One of the best Urasuki technic I've ever seen...
