I have owned and used many Sakai knives from some of the most respected blacksmiths and sharpeners, and what surprised me most about the Hitohira Nakagawa Rou Mirror Polish Gyuto was not that it was the sharpest or the thinnest knife I have used.
It is simply the most natural.
On paper, this is a 240mm gyuto, but in hand it feels much shorter and more maneuverable. The profile flows beautifully from heel to tip, making rocking, push cutting, slicing and fine tip work all feel equally comfortable. The knife feels like an extension of the hand rather than a tool that demands a specific cutting style.
The geometry strikes an impressive balance. It cuts with the ease of a laser but retains the confidence and stability of a middleweight knife. I never felt the need to be overly delicate with it, yet it still moves effortlessly through onions, garlic and most everyday ingredients.
I found food release on most other ingredients to be perfectly acceptable and never distracting during normal cooking.
What impressed me most is how balanced the knife feels. It is one of the most complete and versatile kitchen knives I have used. Every aspect of the knife feels intentional and well judged.
After spending time with it, I understand why so many people speak highly of Nakagawa-san’s forging and the craftsmanship behind the Rou line. This is a knife that quietly encourages you to cook rather than admire it from afar.
Highly recommended.
